Culinary Uses

Peach Lavender Jam 

from The Art of Cooking with Lavender

  • 1-2 T Chopped culinary lavender bulbs
  • 1 1/4t peeled ginger root and orange zest
  • 3/4 c boiling water
  • 1/3 c fresh lemon juice
  • 2  1/2 c sugar
  • 1 box + 3 T sure jell, lower or no sugar or 1 Box Ball fruit jell no sugar
  • 3 c ripe pitted peaches
  • 1 c fresh orange segments chopped free of membrane

  • Combine lavender, ginger root and orange zest in a bowl Pour the boiling water over them and let stand for 15 minutes to an 1 hour.
  • Strain the water through a fine strainer, 1 cup use a spoon to press as much liquid out of it and add water to measure 2/3 cup. 
  • Stir in lemon juice and set aside.
  • Chill metal spoons in refrigerator to check jam.
  • With a long handle spoon stir sugar pectin in 4 qt or larger until blended & no lumps. Stir in diffused water mixture then peaches and oranges.
  • Bring to boil over medium high heat stirring constantly. After several minutes when the mixture comes to full foaming boil, start timing & stirring for 2 minutes.
  • Immediately chop a half of teaspoon of jam into chilled spoon and count 30 seconds. If it runs off instead of jelling just slightly and clinging to the spoon cook 1 minute longer then check using another chilled spoon. If it jells slightly it is done.
  • It will continue to jell and thicken further upon cooling. Immediately remove from the heat .
  • Skin off and discard any foam the surface.
  • Let cool for 5 minutes.
  • Using the sterilized ladle, put in the jars. Leave 3/4 head. 
  •  Wipe rims cleaned and add lids and rims. 
  • Let stand until barely warm and refrigerate 24 hours. 
  • Check & tighten lids then freeze up to 1 year or refrigerate for 3 weeks.

Candles, essential oil, fresh lavender, fire sticks, lavender buds.
